About Mimi’s Cafe

Founded in 1978 by Arthur Simms, who was stationed in France during World War II, Mimi’s Cafe is a neighborhood cafe offering French Inspired American comfort food. In February 2013 Mimi’s Cafe was purchased by Le Duff America, Inc., the North American subsidiary of Groupe Le Duff, a global bakery and restaurant company headquartered in Rennes, France. Since then, the team has launched new dishes reflecting the culinary traditions of fresh ingredients, bistro classics, and American comfort food. There are currently 97 Mimi’s Cafe locations throughout 18 states in the U.S.

CARROT RAISIN BREAD
Mimi's Cafe Copycat Recipe

Makes 4 Loaves

1 1/2 cup flour
1 teaspoon baking soda
2 teaspoons baking powder
2 teaspoons cinnamon
1/2 teaspoon salt
1 cup vegetable oil
1 1/2 cup brown sugar
3 eggs
1/2 cup chopped walnuts
1/2 cup crushed pineapple, drained
1/2 cup raisins
1 cup finely shredded carrot

Preheat oven to 350 degrees.Grease and flour 9-inch square pan or four 3 X 6-inch loaf pans. In a medium bowl; sift together first five ingredients; set aside. In a separate bowl; whisk together oil, brown sugar and eggs; pour into flour mixture and stir well. Stir in walnuts, pineapple, raisins and carrots. Pour into prepared pans. Bake 30 to 40 minutes if using 9-inch pan or 20 minute for mini pan or until lightly browned. Test with toothpick or cake tester to make sure it's done.
