About Mimi’s Cafe

Founded in 1978 by Arthur Simms, who was stationed in France during World War II, Mimi’s Cafe is a neighborhood cafe offering French Inspired American comfort food. In February 2013 Mimi’s Cafe was purchased by Le Duff America, Inc., the North American subsidiary of Groupe Le Duff, a global bakery and restaurant company headquartered in Rennes, France. Since then, the team has launched new dishes reflecting the culinary traditions of fresh ingredients, bistro classics, and American comfort food. There are currently 97 Mimi’s Cafe locations throughout 18 states in the U.S.

Tomato Basil Soup




TOMATO BASIL SOUP
La Madeleine Copycat Recipe

Serves 8

4 cups tomatoes, peeled, cored and chopped, or canned whole tomatoes, crushed
4 cups tomato juice
14 washed fresh basil leaves
1 cup heavy cream
1/4 pound sweet, unsalted butter
salt to taste
1/4 teaspoon cracked black pepper

Combine tomatoes, juice/and or stock in saucepan. Simmer 30 minutes. Puree, along with the basil leaves, in small batches, in blender, food processor (or better yet, one of those handy hand-held food blenders, right in the cooking pan).  Return to saucepan and add cream and butter, while stirring, over low heat. Garnish with basil leaves and serve with your favorite bread.

  1. I eat this soup at Mimi's quite often. this recipe doesn't taste like the one at the restaurant.

  2. Just in looking at this recipe, it will not produce the Mimi's Tomato soup. I can taste onions, something spicy hot(which you could possibly get from the ground pepper, but not likely) plus other spices...
