About Mimi’s Cafe

Founded in 1978 by Arthur Simms, who was stationed in France during World War II, Mimi’s Cafe is a neighborhood cafe offering French Inspired American comfort food. In February 2013 Mimi’s Cafe was purchased by Le Duff America, Inc., the North American subsidiary of Groupe Le Duff, a global bakery and restaurant company headquartered in Rennes, France. Since then, the team has launched new dishes reflecting the culinary traditions of fresh ingredients, bistro classics, and American comfort food. There are currently 97 Mimi’s Cafe locations throughout 18 states in the U.S.

Beef Wellington



BEEF WELLINGTON 
La Madaeleine Recipe

1 Beef Wellington
3 oz. Burgundy Sauce
round pastry dough
Mushroom Duxelle (see recipe below)

Put some mushroom duxelle on bottom of the pastry dough. Place beef wellington on top of the mushroom duxelle. Roll the dough over the beef wellington. Place the covered beef wellington on an
inverted sheet pan. Lightly brush  the pastry dough with egg wash. Cook at 400 degrees for 13 minutes, or until pastry is golden brown.

Mushroom Duxelle 
quartered mushrooms
6 oz. red wine
1 oz. diced onions
1 oz. shaved garlic
5 oz. black pepper
1 oz. beef base
3 bay leaves

Place all ingredients into a sauce pan. Reduce slowly until all liquid has evaporated. This will take almost 1 hour. Remove from heat.
