About Mimi’s Cafe
Founded in 1978 by Arthur Simms, who was stationed in France during World War II, Mimi’s Cafe is a neighborhood cafe offering French Inspired American comfort food. In February 2013 Mimi’s Cafe was purchased by Le Duff America, Inc., the North American subsidiary of Groupe Le Duff, a global bakery and restaurant company headquartered in Rennes, France. Since then, the team has launched new dishes reflecting the culinary traditions of fresh ingredients, bistro classics, and American comfort food. There are currently 97 Mimi’s Cafe locations throughout 18 states in the U.S.

BRIOCHE CROQUE MADAME
Mimi's Cafe Copycat Recipe
Makes 4 Sandwiches
2 tablespoons Dijon mustard
8 slices broiche bread
4 ounces baked ham, thinly sliced
2 1/2 cups grated Gruyere cheese, divided
4 tablespoons butter, softened
2 tablespoons canola oil
4 tablespoons Béchamel sauce, divided
Preheat the broiler to the lowest heat setting. Evenly divide and spread the mustard on 4 slices of bread. Place a few slices of ham, followed by 1/2 cup Gruyere, on the mustard-side of the bread. Cover the cheese with the remaining slices of bread and spread the butter on the outside surfaces of the sandwiches.
Preheat a skillet over medium heat to fry the eggs while the sandwiches broil. Fry one egg at a time, as desired. Place the sandwiches on an ungreased baking sheet and broil for about 5 minutes, turn them over, cover with the remaining cheese, and continue cooking until they are crispy and golden brown, about 5 additional minutes. Serve each hot sandwich with a fried egg and 1 tablespoon of Béchamel sauce on top.
