About Mimi’s Cafe
Founded in 1978 by Arthur Simms, who was stationed in France during World War II, Mimi’s Cafe is a neighborhood cafe offering French Inspired American comfort food. In February 2013 Mimi’s Cafe was purchased by Le Duff America, Inc., the North American subsidiary of Groupe Le Duff, a global bakery and restaurant company headquartered in Rennes, France. Since then, the team has launched new dishes reflecting the culinary traditions of fresh ingredients, bistro classics, and American comfort food. There are currently 97 Mimi’s Cafe locations throughout 18 states in the U.S.
Cream of Mushroom Soup
CREAM OF MUSHROOM SOUP
La Madeleine Restaurant Copycat Recipe
5 lbs white button mushrooms whole, blanched
5 cups mushroom broth (blanching liquid)
1-2 diced onions
1/2 tsp herbes de provence (or substitute thyme)
6 tablespoons butter
5 tablespoons whole wheat flour
1/2 teaspoon salt
1/2 teaspoon salt black pepper
2 cups half n half
2 tablespoons orange juice (sherry substitution)
In a large sauce pan cook the mushrooms, broth, onion, herbes de provence over medium heat until tender about 20 minutes. Puree mushrooms, onion and broth in a food processor in batches, or use immersion blender to puree in the pot. Remove puree to a bowl or get a new pot out and melt the butter. Add the flour, whisk until smooth and cook the roux for one minute. While whisking, add the half n half, salt, pepper and mushroom puree and bring mixture to a boil. Cook until thickened, then add the orange juice.
