About Mimi’s Cafe

Founded in 1978 by Arthur Simms, who was stationed in France during World War II, Mimi’s Cafe is a neighborhood cafe offering French Inspired American comfort food. In February 2013 Mimi’s Cafe was purchased by Le Duff America, Inc., the North American subsidiary of Groupe Le Duff, a global bakery and restaurant company headquartered in Rennes, France. Since then, the team has launched new dishes reflecting the culinary traditions of fresh ingredients, bistro classics, and American comfort food. There are currently 97 Mimi’s Cafe locations throughout 18 states in the U.S.




Carrot Ginger Soup

La Madeleine French Bakery & Cafe Restaurant Recipe

2 pounds carrots
1/4 stick unsalted butter
1 tablespoon grated fresh ginger
2 garlic cloves, finely chopped
1/2 Anaheim pepper, finely chopped
3 1/2 cups water
1 vegetable bouillon cube
1/2 teaspoon salt
1/4 teaspoon ground coriander
3/4 cup light table cream

Peel and slice carrots into chunks; set aside. Save two carrots and dice into little cubes for later use.

In a medium-size pot, melt the butter over medium heat and add the ginger, garlic and Anaheim pepper. Cook for about 30 seconds, being careful not to brown the mix.

Add the water and carrot chunks and bring to a boil. Add vegetable bouillon cube, salt and coriander. Cook over medium heat for about 20 minutes, or until carrots are soft.

Pour carrot soup into a blender and process until pureed. Return pureed soup to pot and bring to a boil, stirring occasionally. Add cream and remaining diced carrots and bring to a slow boil for 5 minutes. Check seasoning and serve piping hot. Makes 6 servings.
